Senatore Cappelli friselle represent the excellence of the Apulian tradition, handcrafted with Senatore Cappelli durum wheat flour selected, milled and processed in Salento by “Il Mulino Calogiuri”. This variety, originating from the selection of Nazareno Strampelli in 1915 and dedicated to Senator Raffaele Cappelli, is appreciated for its exceptional organoleptic characteristics and nutritional content. Rich in proteins and vitamins, including vitamin E, it is also a natural source of unsaturated fats with antioxidant properties. Interest in Senatore Cappelli has been revived for its purity, free from genetic mutations, and for its ability to withstand adverse weather conditions.
