Terra d’Acaja Chickpeas are a typical product of Salento, where the climate and soil favor the cultivation of high-quality legumes. Rich in proteins, fibers, mineral salts, vitamins and small quantities of Omega 3, chickpeas are a highly nutritious food, perfect for enriching the daily diet. The chickpea (Cicer arietinum, L. 1758) is an ancient plant native to Western Asia and is the third most important grain legume in the world, immediately after beans and peas. Its dry seeds offer an excellent protein intake, with a percentage that varies from 15% to 20%, and are characterized by their very high nutritional quality, making them a precious food for health. To prepare a traditional “pignata”, it is recommended to leave the chickpeas to soak for 12-18 hours. Once rinsed, they can be cooked over low heat for about 2 hours (or 50 minutes in a pressure cooker) until they reach a tender and creamy consistency, ideal for soups, stews or as a base for salads and one-dish meals.
